RECIPE: Gochujang, Soy, Ginger & Sesame Korean Chicken

GOCHUJANG, SOY, GINGER & SESAME KOREAN CHICKEN

Minimal effort delivers a big bold plate of flavour. Sticky, spicy-sweet chicken punched with umami soy, zesty stem ginger and nutty sesame.


SERVES: 4

PREP TIME: 10 minutes

COOKING TIME: 10 minutes


INGREDIENTS:

  • 8 Boneless, skinless Chicken Thighs
  • 1 tbsp Olive Oil
  • Sesame Seeds, to garnish
  • Spring Onions, to garnish

For the Marinade:

  • 4 tbsp Gochujang
  • 4 tablespoon Soy Sauce
  • 4 tsp Rice Vinegar
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 5cm piece of fresh Ginger, grated
  • 4 balls Opies Stem Ginger in Syrup, finely diced
  • 4 tbsp Opies Stem Ginger Syrup
  • 2 tsp Maple Syrup
  • 2 tbsp Opies Pink Peppercorns, drained, rinsed, crushed
  • Lime wedges
  • Sesame Seeds
  • Spring Onions

Optional extras:

  • Lime wedges
  • Kimchi

Serving Suggestions:

  • with rice and steamed Greens
  • with a smashed Cucumber Salad
  • with Quick Pickles (onions, gherkins)
  • in a Burger, with an Asian slaw
  • in a Wrap, with lettuce, cucumber and kimchi
  • with Rice Noodles

METHOD:

  1. In a mini food processor, blend all the marinade ingredients into a smooth paste.
  2. Reserve 3 tbsp of marinade and set aside.
  3. To the remaining marinade, add the chicken and stir well to coat well. Cover and leave to marinate for 30 mins (if time allows, marinate in the fridge overnight).
  4. Place a large frying pan over a medium to high heat and the oil.
  5. Place half the chicken thighs into the pan, without overcrowding them.
  6. Without moving the chicken, cook for 4 minutes, then turn and cook the other side for a further 3-4 more minutes until the chicken is cooked through.
  7. To check that the chicken is cooked, ensure that the juices run clear or the internal temperature is at least 74°C.
  8. Set the chicken aside to rest and cook the next batch, repeating the process above.
  9. Once all of the chicken is cooked, brush with the remaining marinade.
  10. Slice the chicken and garnish with the sesame seeds and spring onion, squeeze over the lime juice.
  11. Serve with rice, a smashed cucumber salad and/or kimchi.
