RECIPE: Melty Cheese and Pickle Mummies
RECIPE: Melty Cheese and Pickle Mummies
PREP: 20 minutes
COOKING TIME: 20 minutes
Makes: 12
Ingredients:
- 1 sheet of puff pastry
- 1 jar Opies Pickled Walnuts, drained
- 12 Babybels, wax removed
- 14 olives, sliced widthways
- 1 egg, beaten
Method:
- Preheat the oven to 200°C / 180°C Fan / Gas 5. Line a baking tray with greaseproof paper. Blitz the pickled walnuts in a food processor until finely chopped.
- Unravel the pastry onto a floured surface and cut into 16 equal squares. Add a teaspoon of pickled walnut mixture in the centre of 12 of the squares then top with a Babybel. Fold the square corners over to encase the cheese then flip over so the seams are at the bottom and place onto the baking tray spaced apart.
- Cut the remaining 4 squares into thin strips of varying lengths. Overlap the strips on each parcel to create ‘bandages’, leaving room for the eyes, and using the egg wash to help them stick. Do a final brush of egg wash over each parcel.
- Place two sliced olives on each parcel nestled between the bandages to look like eyes. Place into the oven and bake for 15 – 20 minutes until golden. Allow to cool but serve warm.
